I like these peanut butter snacks (based loosely on the Peanut Butter Cookie Dough Bites in Oh She Glows by Angela Liddon) because you can customize them with just about anything! 2 T. peanut butter 2 T. maple syrup 2 T. coconut oil 1 1/2 c. rolled oats, pulverized in blender (or 120 g oat flour) 1 t. pure vanilla extract 1/2 c. almond meal or partially defatted peanut flour 2 T. raisins (or more to taste) 1/4 t. salt Warm the oil, peanut butter, and maple syrup. Add the vanilla extract and mix. Stir in the dry ingredients. If the dough seems too dry to hold together, add a bit of water or more melted peanut butter or coconut oil. Add the raisins last (or use mini chocolate chips, other dried fruit, etc). Press the dough into a 8 x 8 pan lined with parchment paper. Press down the top until smooth with another piece of parchment paper or a flexible spatula. Freeze for half an hour, then cut into 16 or more small bars. Store in the fridge. You can also roll these into balls. Cut balls in half to feed to young toddlers to avoid choke hazards. Use sunflower butter and omit the almond meal to make a nut-free version (add a little more oat flour to get the right texture). Use un-pulverized quick oats if you don't want to mess with making oat flour. The bars will have more texture. Sneak in some protein powder if you like, too! Or other healthy ingredients like flax meal, chia seeds, and so forth.
